I Love Love Love Spring… it is my favorite time of the year.  The warmer weather just automatically puts me in a better mood.  It is so nice to be able to open the windows and doors and enjoy the sounds of spring. Our winter was unseasonably mild and now our Spring is unseasonably warm… I have a feeling that we are going to have a miserable summer, but I am not complaining yet.  Nope, I am just soaking up this incredible Spring weather

Reason To celebrate

For the past several years I have really dreaded my birthday.  Each year as I crept closer to 30 I would just cringe at the thought of entering a new age bracket.  So as we turned the corner into 2012 the last thing I wanted to think about was March 14th!  However, a few weeks ago this all changed.

It was early one morning and I was up before anyone else preparing for my morning run.  The Lord brought a dear and precious friend to my mind and I immediately started lifting her up to the Lord in prayer.  Her name is Alesha Goodlet and she is 31 years old with two young children (younger than mine) and she has stomach cancer.  I have been so overwhelmed and burdened for her that it was not strange for her to creep into my mind.  As I began to pray for her – asking the Lord to restore her body completely and to give her strength physically and emotional I suddenly became convicted of my own grumblings.

Here I am, not much younger than Alesha, except I do not have cancer and I am grumbling because I am turning 30!  Shame on me!  So today on my 30th birthday I am praising the Lord for another year, another birthday.  I am thanking Him for health and happiness.  Blessing that I certainly do not deserve.

Chris and I have never made a big deal out of each others birthdays, but I think this year that ends because folks we have a reason to celebrate!

Where Have you Been??

Where have I been you may ask… well I have been here, just not here on my blog.  For some reason life has seemed to get the best of me lately and I have managed to find little or no time for blogging.  I am hoping to get back in the swing of things soon!  Blogging is such an outlet for me as well as a great place to store memories of my children so my sporadic absence is hopefully over.

I have been running quite frequently and I have to say that I am thoroughly enjoying myself.  Honestly, when I am out on my runs that is usually one of my favorite parts of the day – even if it is at 5:30am.  There is something about getting up before the sun comes up or before most anyone else is up and hitting the pavement that stirs me inside.  Makes me feel like I have accomplished something.  I may have not finished the laundry or managed to unload the dishwasher (my LEAST favorite chore… uggg!), but hey I pounded out at least four miles at 5:30 this morning – so there I finished something.

My half marathon training is nearing the end … the Knoxville Half is less than three weeks away and I am so excited!  The course for this half is around and on UT’s Campus, which in itself makes me soooo happy (have I mentioned lately how much I love my alma mater!?), but the finish line is on the 50 Yard Line of Neyland Stadium – home of my Tennessee Vols!  Ahhhh… I get goose bumps thinking about it!

Last weekend two girlfriends, also training for the Knoxville Half, and I ran an 8k in Knoxville … we had so much fun!  Our husband watched the kiddos (6 total) while us momma runners hit the pavement… I cannot believe we did not get a picture of the 3 of us!  Chris did get a few pictures of my finish though.


This lady in the yellow… I had my sights set on her the last two miles of the race.  I love to try to pick people off in a race – its sort of my motivation.  I pick someone out and say to myself, “ok I want to pass that person” and then once I do (hopefully) I pick out someone else.  It is just a motivator for me and helps me not get too bored.  So yeah… I had my eyes set on her FOREVER and did not get up to her until the end… and FINALLY my kick took over and I passed her right at the finish.

Usually I have a time goal in my head, but I did not set a firm one going in.  I knew I want to have half marathon pace (9:50 is my half marathon goal pace) or under.  I finished in 46:46 with a 9:23 pace, 4th in my age group – I was pleased.  Now if I can just make it to April 1st injury free!

Catch All

Do you have that space in your home that is a “catch all”?  You know, you walk in the house and you toss down the mail, your keys, your phone, and whatever else may be in your hand.  Well… we have that spot!

This drives me nuts!


A quick round about and voila!  Much better!

Foodie Friday: Baked Buffalo Chicken Pasta

A friend sent me this recipe and it is absolutely delicious!


1 pound pasta (I used whole wheat orecchiette)

3-4 boneless, skinless chicken breasts, cooked and cut into chunks

1 tablespoon butter

1 tablespoon flour

1 1/2 cups milk

4 ounces freshly grated Monterey jack cheese + more for topping

1/3 cup freshly grated sharp cheddar cheese + more for topping

1/3 cup buffalo wing sauce

1/3 cup panko bread crumbs

salt and pepper to taste

for garnish: 3/4 cup chopped green onions, 1/2 cup fresh cilantro, 1/2 cup gorgonzola cheese, additional buffalo wing sauce


Preheat oven to 375 degrees F.

Prepare water for pasta and cook according to directions.

While pasta is cooking, heat a medium saucepan over medium heat. Add the butter, and once it’s melted and bubbly add the flour. Whisk together to create a roux and cook for 1-2 minutes until mixture gets a bit golden in color. Add milk, stir and turn down heat to low. Continue stirring until milk thickens. Add in grated cheeses and continue to stir until mixture is smooth. Stir in buffalo wing sauce. Taste and season with salt and pepper if needed.


Spray a baking dish (9 x 13 is fine) with non-stick spray. Add pasta and chicken.


Pour cheese sauce over and mix thoroughly until everything is coated.


Sprinkle with additional grated cheese and bread crumbs. Bake for 25 minutes or until cheese is golden brown.


Remove from oven and immediately top with gorgonzola, green onions and cilantro. Drizzle with buffalo wing sauce.

St. Patrick’s Day–Free Printable

Here we are, March 2012!  I know it is so cliché, but time really does fly by.  March is one of my favorite months of the year.  I love March because it marks the beginning of Spring!  Usually by March I am SO OVER the cold weather and ready to wear short sleeves and dresses without tights.  This winter has been SOOO mild, but ahhh… I am smell spring in the air!

St. Patty’s day is my sister in law Allison’s favorite holiday (or at least it is at the top of her list)… so I made these printable especially for her!

Filling Empty Space … Help!

After some rearranging in our playroom I have some empty space that I want to fill with photos.


Deciding which photos to use has proven to be more difficult than I thought.

These are photos from our winter photo shoot last November.  We used these for our 2011 Christmas Card.  I thought about doing the first photo maybe 16x20 or larger and then doing two other photo’s (of the children) beside it…

Deciding between which photos to use is soooo difficult for me!  Colton was very cooperative this day and took a ton of great pictures. 

These are not my favorite picture I have of Claire, but they are the best from that day.  She was not very cooperative… she just wanted to play.


My other option are the photos from our MckMama photoshoot


I want to use photos from both of these photo shoots in our house, but I am not exactly sure what parings to use.  What do you think???
