Bacon Ranch Chicken Skewers

I have found a food blog that is Ah-mazing!  No, really… Chef John’s blog is one of the best food blogs I have found.  His recipes look amazing and are EASY to follow.  The best part – he videos the recipes for you!!!  Cooking a new recipe has never been so easy!

Ingredients for 12 Bacon Ranch Chicken Skewers:

  • 12 bamboo skewers
  • 4 large (8-10 oz) boneless skinless chicken breasts
  • 1/3 cup ranch dressing
  • 1 tsp hot chili paste or any spicy condiment
  • 12 strips bacon
  • 24 pieces of red onion
  • salt and pepper to taste
  • extra ranch dressing to dip

Directions:

Soak your skewers for at least 2-3 hours.

Cut the chicken breast into cubes.  You should be able to get about 12 cubes from one breast.  Add chicken to mixing bowl and add chili paste and ranch dressing.  Once it is well mixed wrap with plastic and marinade 1-2 hours. 

Now time to assemble your skewer.  Start with a piece of onion then start with the end of a slice of bacon.  Next, add a piece of chicken then grab the bacon and bring it over to cover the chicken.  You then want to turn the skewer and add another piece of chicken – you will make a weaving pattern with the chicken and bacon.  After your fourth piece of chicken fold over the bacon for the last time and then add a piece of onion.  Now spread the chicken out a smidge.

Grill over medium heat for about 12-15 minutes rotating your chicken every 3-4 minutes.
