Zucchini Recipes

June 11, 2012

Thanks to a mother in law and a father in law who both have large gardens there is always an abundance of zucchini in our kitchen during the summer.  Sadly, most of the time it goes to waste because I just do not know what to do with it!  However, that is all going to change now because I found some great recipes.  Check these out!

This dish below is Easy Cheesy Zucchini Bake from Kalyn’s Kitchen.  Cheese makes everything better, right!?  This is a great website for those looking for healthy recipes as well as learning more about gardening.

I am not a huge fan of marinara sauce, but my husband is.  We have found a few sauces that are super low in sugar so sometimes we splurge.  This zucchini parmesan from Tessa of Handle the Heat seems super easy and delicious!

Now look at this … Baked Zucchini with Mozzarella … one word – YUM!!

There are tons of recipes out there for Zucchini Chips … I think what probably makes each of these recipes different is the breading and the dipping sauce.  Below are Oven-Fried Parmesan Zucchini Chips from Cinnamon Spice & Everything Nice.

Confections of a Food Bride has this great recipe for Crispy Baked Zucchini Fries with Ranch Dressing.  I am definitely doing this recipe over the fourth of July holiday.

The website Skinny Taste has quickly become one of my favorite food sites.  Gina has some great recipes that are good for you.  Here she shares her Baked Zucchini Sticks with home made Quick Marinara Sauce.

If it is dessert you’re looking for check out these Carrot & Zucchini Bars with Lemon Cream Cheese Frosting.  This recipe is from Six Sisters Stuff (could you imagine having 5 sisters!?) … this site also has some great craft ideas.

Here is one more recipe for Zucchini Fries.  These are Crispy Parmesan Zucchini Fries.  I think my kiddos would really like these!

Who would have thought you could make Zucchini Pizza?  This recipe is for Zucchini Pizza Casserole.  The recipe is easy to follow and sounds super delicious!

Shew!  Okay, that is nine great recipes so hopefully there will be no more wasted Zucchini!
