Jalapeno Cheddar Cornbread

One of my past host and a good friend of mine is an amazing cook.  She is always coming up with something tasty for dinner.  Just this week she sent me this picture of her Jalapeno Cheddar Cornbread made in her Pampered Chef Brownie Pan.

Ingredients:

    • 2 cups Martha White Buttermilk Cornmeal
    • 2 eggs
    • 1 chopped jalapeno (fresh or pickled)
    • 1 small onion, chopped
    • 3/4 cup skin milk (may need more – should be consistency of pancake batter)
    • 1/2 cup shredded cheddar cheese

Directions:

Preheat Oven to 450 degrees.  Spray non-stick cooking into pan.  Combine all ingredients and add 2 large tablespoons batter to each section.  Bake for 15 minutes.  Serves 12.
